- 3 ripe avocados
- ¼ cup seeded chopped plum tomato
- ¼ cup sliced green onion (white and green parts)
- 2 tbs. chopped cilantro leaves
- 1 large garlic clove, finely minced
- ½ tsp. kosher salt
- Juice from ½ lime
- ½ jalapeno, seeded and finely minced (optional)
Start by prepping the tomato, onion, cilantro, garlic, and jalapeno pepper (if using). This goes together quick so you want all your ingredients ready to go.
Next, cut your avocado in half and separate the halves by twisting one the halves slightly. To easily remove the pit, hold the avocado in your palm and whack the pit with your knife. Twist the pit and it will come right out.
To remove the avocado from their skin, cut each half again, and score the flesh with the tip of your knife. You can either work your thumb under the flesh or use a spoon, the cubes will come right out.
Place the cubed avocado in a large mixing bowl and add the garlic and kosher salt. Mash the avocado until it is semi-chunky. I prefer the texture with some chunks of avocado remaining, but you could also mash until it is smooth.
